Weight Loss for the Week: 0lbs
Ok, I never should have commented on how I hadn't gotten sick last Sunday. Last Monday, to serve me right for being so over zealous about my great immune system, I got sick. I got the cold with a side of sinuses. I ended up having to call in on Tuesday and went in to the doctor. I love shots and medicine and anything like that that helps me get better. I was able to go in to work the rest of the week which was good.
When I'm sick like that, I eat more carbs and starches than I normally do, so between that and being all stopped up with the antibiotics, I know it'll be another week before my body settles out all the food. I still feel bloated the whole time I'm on the antibiotics though. That's the part of it that I don't like. Whatever it takes to get better though is worth it I suppose.
Aside from that, this week was fine, kind of odd though. We had some wintry weather this week, making the students a little crazy with the hope of snow and ice and, most importantly, the possibility of no school. No matter what changes happen with a culture, no matter how vast the generation gap seems, snow days will still cause all students to act giddy. Glad to know some things don't change :)
I'm enjoying this three-day weekend, part of why I'm posting a day late even. I had some nice time with the family on Saturday. I had a lot of fun brunching with a friend most of yesterday, in fact, we may have had too much fun. And then I finally saw Django: Unchained with another friend last night- so awesome, just so awesome.
Alright, I tried a new recipe this past week, before I got sick. It was Grilled Chicken with Spinach and Mozzarella. It was pretty tasty :)
Grilled Chicken with Spinach and Mozzarella:
3 large chicken breasts, cut in half into cutlets
3 cloves garlic, minced
1 tbsp. olive oil
3 oz. part-skim mozzarella
10 oz. frozen spinach
Roasted red peppers, optional
Grill chicken breasts and set to the side. Saute olive oil and garlic, add spinach and cook until thoroughly heated. Place chicken on baking sheet. Divide spinach equally on each chicken breast. Sprinkle half an ounce of mozzarella on each breast. Add slices of roasted red peppers, if you want. Bake at 400 for 8 minutes.
